raw yogurt: just kidding
so it actually separated into curds and whey. it’s just that the curds were very soft and large and beautiful. i guess it was somewhere between yogurt and split milk.
so i put it in a cheesecloth and made:
-yogurt cheese with sea salt, thyme, and lavender
-a blended greek yogurt type thing
-over 1 quart of whey,
-which i will use to make ricotta!
dairy is so much fun to play with
