Last week I made rejected pesto.
Take some radish greens, carrot greens, parsley, and mustard greens, and chop them up and mix them. Add a couple cloves of garlic and a big handful of pumpkin seeds and/or pine nuts (I like a mixture of the two). Cover the whole shebang with a generous helping of olive oil and purée.
Thinly slice the radishes and the carrots from which you rescued the greens, and use them as excuses to scoop...
Tonight I am eating chia pudding
Put a tablespoon of chia seeds into a cup. Fill the cup with almond milk. Let the whole thing sit for a few hours.
Come back and add honey, a pinch of salt, some cinnamon and vanilla. Also some cocoa if you like.
This afternoon I made an omelette
Dice an onion and an apple. Sautée them. Chop some spinach and add it. When everything is browned crack an egg over all of it and stir. Toss in some minced garlic with salt and pepper.
This is especially good with a side of mizuna and a baby grilled cheese with avocado.
Today I made soup
Dice and sautée an onion. Add radish greens (thickest stems set aside with onion skin for broth) and 1/2 cup water. Once greens have darkened, add a quart of homemade nettle broth. Simmer everything for a few minutes, then add a tablespoon of dill and s&p to taste. Use an immersion blender to slightly purée.
Best eaten with rustic sourdough and butter.
